The Flu, The Mall and Gnocchi Soup


Hey guys! I hope everyone's weekend has been good! I can't believe tomorrow's Monday again. It's crazy how fast the weekend goes by.
My weekend hasn't been bad, but Saturday afternoon I started feeling funny and by dinner time I had a full blown flu. It's awful! I haven't been this sick in awhile. My throat hurts so much I can barely talk, my nose is stuffy and it took me hours to fall asleep last night. By the time I finally started dozing off, it was 2 AM and about 30 minutes after that I woke up drenched it sweat. My whole body was just coated in it. It was awful.
I woke up this morning feeling horrible. Around 8 AM I popped two Advil. About 10 minutes later I felt SO much better! Thank goodness for Advil!

About 1 o'clock, I took two more Advil and the M.O.M and I went to the mall. I got some great tea from Teavana.
I got:
Strawberry Grapefruit Xue Long
Blueberry Bliss
Honeybush Vanilla 
Caramel Almond Amaretti 
Pineapple Kona Pop
Body and Mind

And I got the Perfect Tea Maker and some rock sugar. They all smelled delicious and I can't wait to make a cup! 
Did you guys know that Oolong tea slows the aging process? I love the taste of oolong anyway, but that's a great added bonus!

After we left Teavona, we popped into Charming Charlie's where I got a great enamel bracelet (eeeek!!!!) 
And an adorable bunny watch. How cute!

When I got home from the mall, my Advil Power had diminished and I took some more. 

I just finished watching Peter Pan (the old 1953 version) for an English project and I'm starving! For dinner, I'm making a creamy gnocchi soup with a salad. What are you guys having?

The gnocchi soup is to die for so here's the recipe in case anyone wants to try it (courtesy of copykat.com)


Ingredients

  • 4 tablespoons (1/2 stick) butter
  • 1 tablespoon extra virgin olive oil
  • 1 cup finely diced onion
  • 1/2 cup finely diced celery
  • 2 garlic cloves, minced
  • 1/4 cup all-purpose flour
  • 1 quart half-and-half
  • 2 (14-ounce) cans chicken broth (if you enjoy a thicker soup, use 1 can)
  • Salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried parsley flakes
  • 1/4 teaspoon ground nutmeg (optional)
  • 1 cup finely shredded carrots
  • 1 cup coarsely chopped fresh spinach leaves
  • 1 cup diced cooked chicken breast (you can use a rotisserie chicken)
  • 1 (16-ounce/500g) package ready-to-use gnocchi

Instructions

Melt the butter into the oil in a large saucepan over medium heat. Add the onion, celery, and garlic and cook, stirring occasionally, until the onion becomes translucent. Whisk in the flour and cook for about 1 minute. Whisk in the half-and-half. Simmer until thickened. Whisk in the chicken broth. Simmer until thickened again. Stir in 1/2 teaspoon salt, the thyme, parsley, nutmeg (if using), carrots, spinach, chicken, and gnocchi. Simmer until the soup is heated through. Before serving, season with additional salt, if necessary.
